When we taste a food we all get different impressions of the flavour. This is because we are all different and have different sensativites to aromas. When I first started work I conducted taste tests among my collegues, most could not tell small differences between products however there was always a super taster who could always tell the difference. So if you are wanting to match a flavour using only your taste buds, find yourself a super taster.
Before I began eating garlic I was very sensative to its flavour and would not eat food containing it and hence I was then a super (garlic) taster! When matching flavours sometimes you cannot taste certain components because they are present at or below your own personal flavour threshold. To others these components are strong and desirable components of the flavour. Only certain people are able to taste milk that is light struck and the long list of fruit flavours on wine labels are often only experienced by the few. Most teenagers don't like the taste of beer or wine and hence the need for those "alcoholic soft drinks" As they mature beer and then wine becomes more appealing. Click and read this first Olfaction
